Almond, vanilla and cinnamon crescents
These are so yummy and also a great homemade gift at christmas time for friends and family. I have tried to keep them as healthy as possible as a cookie can be but they are still cookies and at christmas time a little indulgence is surely necessary.
120g ground almonds
120g brown sugar
290g spelt or buckwheat flour
2 tsp vanilla bean paste
2 tsp cinnamon airport
180ml melted coconut oil
60ml oat/almond milk
Icing sugar for dusting
Preheat oven at 180 oc.
In a large mixing bowl combine the ground almonds, brown sugar, spelt or buckwheat flour, vanilla and cinnamon. Then add the melted coconut and oat milk and mix until a dough is formed. Shape into crescents and then bake on a greaseproof paper lined baking tray for 15 minutes or until golden brown and cooked.
Transfer to a cooking rack and dust with icing sugar.
