Black Venus Rice Salad

Black rice salad with mango, spring onions, coriander, toasted almonds, pomegranate and

avocado with a lime, ginger and garlic dressing.


Black venus rice is my favourite kind of rice as it has a nice nutty bite to it and lends itself to

zingy salads perfectly without turning to mush. Black rice has many health benefits such as it is full of antioxidants helping to reduce inflammation in the body and an excellent source of fibre improving digestive health.


This salad is also great the next day, apart from the avocado which I suggest you put on top.


Ingredients


Salad


Black Venus rice 250g

Cinnamon stick (optional)

Cardamom pods 3 (optional) squashed open

Mango chopped

Spring onions 3 chopped

Almonds toasted and chopped

Pomegranate seeds

Coriander chopped

Avocado sliced


Dressing

Juice of 2 limes

Rapeseed oil 1 tbsp

Maple syrup 2 tsp

Garlic clove crushed

Ginger 5cm finely grated.





Boil rice in water with the cinnamon stick and the cardamom. You can just boil the rice in water but I find the spices give it that extra layer of flavour. When tender and still has a bit to it, drain and leave to cool and then add to a nice dish.


Whilst rice is cooling make the dressing by adding all ingredient to a bowl and mix, then add to the rice and let the flavors develop whilst you prepare the rest of the ingredients.


Add the remaining ingredient apart from the avocado to the rice and mix then add the avocado on top and perhaps a little more coriander to make it look pretty.
