Cardamon, Apricot & Toasted Cashew Nut Bites

These are great as an any time sweet snack or as desert in the children's lunch boxes. Dried apricots are a great source of iron and also contain copper that helps absorb iron.
200g Cashew nuts, toasted
250g Apricots, unsulphured
1 ½ tsp Ground cardamom
2 tbsp Maple syrup
Coconut flour for coating
Add the cashews with the oats to a food processor and blend until they are fine.
Then add the remaining ingredients and blend until the mixture comes together.
Roll into balls and then role in the coconut flour.
Try and hide them from others, they will be gone in minutes!!
