Chimichurri and borlotti bean salad with sun-dried tomatoes

I love the combination of all the herbs and lemon zest in this salad, so fresh and yummy. Borlotti beans are full of protein, which is an essential nutrient which helps form the structural component of body tissues and building muscle plus one cup of borlotti beans contains 21 percent of the recommended amount of iron per day.

This is quite a summery salad though we make it year round perhaps to brighten up a grey winters day.


Ingredients


Thyme medium bunch, leaves picked

Oregano medium bunch, leaves picked

Parsley medium bunch, leaves picked

Sage leaves, about 10

Coriander medium bunch, including stalks

Small bunch of mint

Zest of a lemon

Juice of a lemon

Garlic, 2 cloves

Rapeseed oils 2 tbsp

Toasted cumin seeds 1tbs

Salt and pepper to taste


Borlotti beans, 2 cans rinsed

Sweet red peppers 2, diced

Cucumber 1/2, diced

Sun Dried tomatoes about a hand full, roughly chopped



Making chimichurri this way is so easy. Simply put all the herbs, lemon zest, lemon juice, garlic, rapeseed oil and cumin in a food processor and blitz together.



Then mix in a bowl with the borlotti beans red pepper, cucumber and sun dried tomatoes and season to taste. So easy and delicious with a crusty piece of sourdough bread. .
