Date, Walnut and Cinnamon Flapjacks
Flapjacks are so good as a sweet snack or an on the go breakfast. These are especially yummy and guilt free as they have no added sugar. The sweetness comes from the dates and banana. The nuts can be left out, though I like the flavour and texture of walnuts but I know children can often not be so keen on them.
Oats being the main ingredient here are so good for you and their nutrient composition is very well balanced. They contain more protein than most grains and are loaded with important vitamins, minerals and antioxidant plant compounds
100ml boiling water
1 large ripe banana
50ml rapeseed oil
1 tsp vanilla paste
1 tsp cinnamon
½ tsp bicarbonate of soda
1 pinch of salt
250g of oats
80g Walnuts roughly chopped
Preheat oven at 180oC.
Soak the dates in the boiling water for about 10 minutes so they can soften. Then tip the dates and water in a food processor and add the ripe banana and rapeseed oil. Blend until smooth and totally pureed.
In a mixing bowl add the vanilla, cinnamon, bicarbonate of soda, salt, oats, raisins and walnuts then add the date and banana mixture and mix it all together. When it is all incorporated pour into a lined 20cm by 15cm tin and bake at 180oc for about 20 minutes until it has really firmed up and is browning on the edges.
Leave to cool completely before cutting into squares.
