Malted pecan and cashew nut granola
This is easy easy and I'll say it again easy! I alway make my own granola as it tastes so much better than store bought and has a fraction of the sugar. There is so much goodness in almonds, cashews and pumpkin seeds but really any combination of nuts and seeds can be used. I normally make double batch as someone always seems to be snacking on it, usually me, even though it is meant for sprinkling on smoothies or porridge.
100g pecan nuts roughly chopped
100g cashew nuts roughly chopped
50g ground almonds
50g pumpkin seeds
40g coconut flakes
100g jumbo oats
1 tsp cinnamon
Pinch of salt
60ml maple syrup
1 tbsp malt extract
1 tbsp rapeseed oil
1 tsp vanilla paste
Firstly preheat oven at 150oc.
Mix all of the dry ingredients in a large mixing bowl and then add the wet ingredients. Mix again making sure they are all combined. Then spread onto a baking tray lined with greaseproof paper and bake for 25 minutes gently turning the mix over half way through. Keep an eye on it as all ovens vary in temperature so if you feel it's done before take it out and equally if you feel is isn't quite crisp enough leave it in for a few more minutes.
