Toasted hazelnut, date and raw cocoa truffle treats

This is a real favourite of my eldest daughters and so easy to make. She calls them Ferrero Rochers though I’m not sure if that's a complement or not. I find it really satisfies a biscuit or chocolate craving. Dates are very sweet so I don’t find I need to add any other sweetener and they also have the advantage of being rich in several vitamins minerals and fibre. They are also fun to make with the kids though half the mixture seems to get consumed before we can roll them in the coconut or pistachios.


Ingredients


Hazelnuts 200g toated

Dates 500g

Raw cocoa powder 6tbs

Salt a pinch

Vanilla bean paste


Topping

Desiccated coconut

Pistachios ground





Blend the toasted hazelnuts in a food processor until pretty small but not a powder. Then add the dates and process until the mixture starts to clump, add the salt and vanilla and process further until it’s all combined and pliable.




Roll into balls and then role in either coconut or ground pistachios to make them look pretty and give an extra flavour.
